Look what I made: Sweet Potato Fries

Okay, I have been craving for a lot of foodstuff since past few weeks; first shortbread cookies, then pancakes and today sweet potato fries. And now you know why I made these sweet potato fries, this day. To be frank, I didn't expect my first attempt at making fries to turn out so good! No, I'm not boasting, they actually were fantastic and had the same texture as the shop bought once have. Well, I suppose the reason for that is soaking the sweet potatoes after cutting them in a solution of water and vinegar, and (or) re-frying the fries. On the bottom-line, I'd surely make these fries again. Yes, they are that delicious!

The oil I used for making these french fries was Fortune Rice Bran Health Oil. You'd ask why specifically Rice Bran oil, the answer is most type of oil doesn't go too well with me. Either I use olive oil or rice bran oil, but people you can't really use olive oil for frying, it doesn't have a high burning point. Sweet Potato Fries:

Ingredients-

Sweet Potato (I used 300gms)
Water (2 liters)
Vinegar (1 tbsp)
Oil (as required for frying)
Salt and Pepper (according to taste)

Procedure-
  1. Wash thoroughly, peel and the cut the sweet potatoes in a length-wise fashion.
  2. Put the sweet potato strips in a big bowl containing water and give it a wash. This is the first wash and will help to release the starch in the sweet potato.
  3. After the first wash, give it a second wash and continue washing till the water runs clean (it took me three washes in total). Once, done with washing them, soak them in a bowl which has a solution of water and vinegar in it for at least 20-30 mins (I soaked them for 35 mins).
  4. Now, remove the sweet potatoes strips from the water solution and pat-dry them really well (unless you want the oil to splatter on you!).
  5. Pour the required quantity of oil in a frying pan and par-fry the sweet potato strips on a low flame, i.e. fry until they are just golden in color and that should take around 2-3 mins depending upon how thick you have cut them.
  6. Put the par-fried sweet potato fries on a kitchen towel or tissue-paper and blot away excess oil.
  7. Now re-fry the par-fried sweet potato fries on a medium or high flame, depending upon your convenience, for around 3-4 mins or until the ends turns orange in color because these fries will continue to color even after you remove them from the frying pan due to the heat trapped in them (I made the mistake of letting them turn orange in color entirely and that is why my first batch of fries looks sort-of burnt).
  8. Once the edges get a nice orange color, immediately remove the fries and drain excess oil on either a kitchen towel or tissue paper.
  9. Ta-da, it's done. All you need to do now is season it with salt and pepper or any other condiment of your choice.
P.S. Sweet potatoes are really hard to peel and cut!

  1. This looks exactly like normal potatoes fried - like finger chips? I have had sweet potato boiled with rock salt and lemon - never thought one could fry it!
